You can select the plugins you want to block for updates from Block Plugin Update under Settings or tick them all to remove all plugin updates..

Upload the plugin files to the wp-content plugins directory.
Activate the plugin through 'Plugins in WordPress.
You need to logout and login to get the proper effect...
One plugin i use for ticket support have updated and it need now php upgrade, I used Roller back to reinstall version and use this plugin to not forget to never update the problematic plugin...
I was little concerned before installing it being it hasn't been updated WP versions and the were no recent support requests, but I tired it anyway and it does the trick...
updates is good for security reasons, but also some BAD updaters will mess up the another plugins, css and or the site that it happens all the time.
This also the easiest to use and no PHD required like others LOL.
