The problem is that it makes dining of WordPress dashboard by adding columns meta boxes and custom fields that can be very hard for you and your users.
If you don't configure any of the application and just activate the plugin then you'll enjoy WordPress dashboard winning any of the other provided WordPress SEO.
Alternatively you can configure the plugin to only hide WordPress SEO categories on selected post types and taxonomies..

Yes you can though you can't hide the range on the taxonomy edit screen that way but if you're building sites for users then this plugin will allow you to do that with having to explain Screen Options to each of them.
